For Rolex, you're not getting that level out of the box. Period. You need to go to a modder like TC or BK, and they're going to charge you $500.
Other brands like Panerai or Hublot, you can get something pretty good for around $300.
There's a difference between an Oyster Perpetual Date, which is an auto and still in production; and an Oysterdate, which is a handwind and was discontinued in the early '80s.
Just watch the 6:00 subdial. Some models have the wrong number of little "ticks" in-between the larger markers (4, the correct number is 3). It sounds like a small thing, but on a watch that has basically no other flaws on the top side it stands out.

2. The Noob v3 is really good out-of-the-box. The major flaw is the Incabloc/swan-neck assembly, which is on the underside, so as long as it stays on your wrist nobody will see it. That's the part that Marlin works on. Not to bag on Marlin's business, but unless you're planning a ripoff sale I don't see the point.
I don't know why people bother with reps of the OEM straps. For the same money, just get a Panatime.
It's totally normal in the Paneristi world to have a different strap, or a bunch of different straps. They put a screwdriver in the box, fercryinoutloud.

TC is a modder. He takes the watches that the dealers provide and does additional work on them. Obviously this is going to cost more than just getting one from a dealer yourself. Only you can decide if the extra work is worth the extra money.
BK does the same.
Really the best that you can hope for out-of-the-box is passing the "five feet away" test: can someone standing five feet away from you look at your wrist and tell it's a rep? If you let someone take a close look, it will get caught.
