Is the David Wong vintage Daytona case considered better quality & accuracy than for example Phong and Vietnam franken cases, when building gen modified movement frankensteiners?

You could use a 6946 stem + you buy a Stem Extension Tap 9 to Tap 12, perfect match and very cheap.

Great thanks, I assume better to go with extension tap 12 for a worn out crown and tap 11 for a NOS crown/Rep right? Or maybe margins are so small it doesn't matter

Regular 1030 winding stems from cousins uk seem to be too thin...
