DLC is not my thing, but it does look good. I wonder how the finish will hold up since the owner does tend to WEAR his watch? Am I correct in assuming that DLC cannot be polished like the original steel can?

This will be an excellent durability test. I'm very confident that the coating will hold up extremely well, but we shall see...

DLC assumes the texture of the metal substrate. If the steel is blasted, the finish will take on the matte appearance that you see above. If the steel is polished, the DLC will appear dark and shiny, similar to ceramic.

Here are a couple of pics of a fully polished piece (a genuine Silverstein) which was recently coated:
