is there a way to change the colour of the lettering on a 177h dial?

you know, from pure white to ivory/yellowish like gen?

would a coat of varnish do the job?

A tinted varnish probably would be OK. It wouldn't affect the black but should give you the desired effect on the white text.

Shows what I know. I thought the 177 had white lettering.
