but how does the rose gold hold up? I am thinking a watch like that you would keep it for a while...and you don't want the gold scratching or coming off...

Keep, yes but I don't think it would get worn all that often. Any thin spots can be retouched if you have the gear if it comes down to that. There is no real reason the RG should wear any faster than YG. Proberly tougher due to the alloys in it.

Would be a very large investetment for me... do you think there would a good market for them?

Mate, these may be 40mm but wear much bigger. The dial is larger in dia than most 40mm dials.
