Are these JK factory watches the new Cartel pieces? I've seen them referred to as Cartel, and then also JK factory. I'm just wondering if they are the same thing.

Yes, and either ceramic or non is fine. The non-ceramic is probably better perfected over time.

Just make sure you post QC pics in the Rolex Forum and ask experts to help make sure you're actually getting V6 complete, insert, dial, etc.- 1

Ahh that's the one they couldn't authenticate direct with Rolex. Bob paid $1.01m and hasn't been able to sell it since.

Look at it side by side with a genuine, compare bezel alignment, pip alignments on the dial, look for any imperfections, misspellings, etc. What it really boils down to is if it makes you happy. I think it's lovely.
Also - ask for a lume shot.
