I guess the soud is normal while screwing the crown, because it hand-winds at the same. What comes to the date changing, EXPERTS chime in And the hands.. my asian SOSF had "straight" hands, but swiss had bend hands, maybe something because swiss seems to have recessed cannon pinion (not sure one can say that, with breitling, but for PAMs anyway?) Okay, thats strange then.. Are You sure they dont touch each other?, change the time manually at where the second hand is and check again

Sounds like its touching the minute hand, I had the same problem with my swiss fish, I guess You need to take the movement out and GENTLY push the minute hand down, or lift that second hand up.
