Mike on a bike Posted June 4, 2013 Report Share Posted June 4, 2013 I use an infrared type, the two burners put out only 21,000 BTUs but reach temperatures around 700 degrees F by heating a metal U-shaped infrared emitter the grill works by completely separating the flame from the food. JoeLouis Posted June 4, 2013 Report Share Posted June 4, 2013 If its a nice steak, i seal side and side with lid open on high heat or bottom grill, the place the meat on low heat or top grill with lid closed. In fact I'm about to put a Baby back rib rack on the grill in a few minutes. Just read the latest Texas Monthly Magazine, 50 best BBQ joints in Texas and only two or thee cook with and open pit, everyone else uses a big ole smoker/grill and we know the best BBQ in the world comes from those Texas BBQ joints!!! Best BBQ is probably in the Texas hill country, and at a place that's only signage is a rusty old sign that simply says "BBQ"... BBQ must be with lid closes and with a real fire, never gas, you get better authenticity points if you made your own smoker, and super bonus points if it was made out of an old fridge! Grill, doesn't matter as much but I usually tend to go for lid closed with a mind towards the lower temp (4-500 F). I usually only want it just that side of done for chicken, burgers and pork. Steaks, lids closed for pre-heat and then I only give them 3-5 minutes per side with the lid closed as well. Link to comment Share on other sites More sharing options...
