Sounds like a good spec. Here's an update of mine. I used an Ingod dial in the end. However, don't think he's in business anymore. So you're probably better off going with a Yuki. I also went for a Michael Young T19 crystal rather than a Clark. You might want to consider an Athaya 702 crown and tube set rather than a gen.
As well as shaping the crown guards. I generally lower the height of the saddle between them ever so slightly. Countersink and re-tap the hole, then add an Athaya crown and tube. Naturally, I try and avoid taking anything off the top of crown guards. Not perfect, but close enough for me without the outlay of a phong case.
You can use the Yuki. However, you will need to remove the dial feet and use dial dots to attach to the movement. You will also need a date wheel overlay to place on top of the ETA date wheel that aligns to the date window.
Phong bezel and Cartel case is exactly the combo I have. All I needed to do was shave the crystal wall thickness slightly until the retaining ring fitted snuggly.
