I think the only thing that really looks bad on those watches are the crown guards and you have to mod the MBWs any way, apart from that for the price out of the box i like them.
I have not had chance to play with one of these yet, i am wondering how they feel to the MBW.
Another bit i like is the last link on the bracelet where the spring bar goes, being folded like that is more gen like compared to the MBW 93150 that is a solid block
I think you may be correct there, not done it my self, Pugwash did it with a planet ocean but had to use longer canon pin, hour wheel and seconds wheel, i have had my eye open for a broken UPO i could do the same with.
I am wearing the gen today, got it in a swap 2005 year but it was like new!

Both sets you listed look correct in comparison but when you go through the watch parts, branded watch parts, omega and then put in the case number and movement you only get the X21079 hands listed.

When i do the search for the movement and case number it tells me X21079 but the others look the same but are cheeper
Have you got a gen dial to go with those?? the lume on those hands is bright!
The crown has three positions, it does not matter what time it was in but was it pulled fully out or in or half way, the fact that it does not now lock tells me that the keyless works requires resetting.
I have found that removing the stem in the time set position on a 2836 is best for me at least
You should never use any thing smaller than a 1.2mm screw driver to press in the crown release on a 28xx movement
You should not need to press the button when reinstalling, just turn the crown untill it all lines up and then press home, if at this point you realy cant press the stem back in then you may have upset the keyless works, what position was the stem in (winding, handset, date set) when you released the stem ?
Find some silica gel packs like you get in new shoes ans electrical items, and a small tuperware container or a zip lock bag remove the case back and get it all sealed op to get the moisture out asap then there is a good chance it will survive
I am no expert on the version of the DSSD but stay away from the 3135 clone, it is just a dressed up clone of a 2836 and the dressings fall off and stop the movement, on top of that you pay more for what you cant see any way
the 1680 is of the newer design the 5512 is one of the older ones and not as good, i believe the newer vintage series like the 1680 have a better bezel design among other things
They are not that bad to be honest there are a few of them about, An MBW old style case would be a better start point but with out modding it will never be as good as it can, so these are a good enough watch just to get a wear
