I did the same thing to my 390 strap, but with Lexol leather care lotion, not olive oil .. same result. I soaked it good and let it sit and absorb the chemicals then wiped it clean.
The standard suggestion is 40 winds to full power .. when you get to 30 take it easy and pay attention for that "hey I am full!" feeling.
Manual watches will stop you from turning when they are done. Automatic watches let the mainspring slip after they are full so you won't reach a "stop" ...

Both the genuine Swiss 7750 and the Asian clone have a poorly designed power transfer wheel from the crown to the mainspring. Always hand-wind a 7750 gently .. nicely. This gear wears out.
Wholesale Outlet 990 has a mixed reputation here. I personally have had a good experience but others have have not. The parts often do not fit or are wrong.
I'd also depends on what you do all day! Do you sit at a desk or are you walking around all the time? These watches require a thousand arm swings to fully wind.
CNY only officially lasts two weeks but it affects things for four weeks. It'll be ok. Trusted dealers do not screw you. Why risk losing their status on the forums over one customers money?
These watches should have a 40 hour power reserve. You could easily alternate watches on a daily basis and they would both remain wound.
To answer your question, there is no harm in leaving a watch unwound. The oil in a watch slowly evaporates and becomes gummy wether you use it or not.

So here I am trying to make the rep strap for my new 390 soak up some Lexol leather treatment when suddenly I remember ..... I have a freakin' Donerix made custom cayman flank strap with no watch attached hanging in my closet!!!
